Start by cooking 2 medium to large sweet potatoes. You can boil them in a pressure cooker, pan, or Instant Pot until they are soft. Peel and mash them once they are warm.
Heat some ghee in a pan and add almonds. Cook them until they turn golden, then remove and set aside.
In the same pan with the ghee, add the mashed sweet potatoes. Stir and cook for 3 to 4 minutes over medium-low to medium heat.
Add jaggery and mix well. Sauté for 4 to 5 minutes, stirring often, over medium-low to medium heat.
After 4 to 5 minutes, add ½ teaspoon cardamom powder. Stir to mix.
Continue stirring and cooking the halwa until the ghee starts to separate from the sides of the pan. This will take around 10 to 12 minutes. The halwa will come together and change color.
Finally, add the fried almonds and stir to mix. The texture of the halwa will be similar to semolina halwa, but the taste will be different.
